High temperature had a marked effect on fatty acid composition and caused significant changes especially in neutral lipid and glycollpid fatty acids. Small changes were also observed in phophollpid fatty acids. A large increase in free fatty acid was also found, since free fatty acids are known to be damaging to cells.
